Savory Vegan Tacos

There is something about eating outside, for whatever reason the food seems to taste even better. It’s probably a mix of the sunshine and feeling like a kid again.

One of my favorite dishes to bring on a picnic (or to eat at home, in the kitchen or on the couch!) is tacos! Tacos are great for so many reasons but mostly because they can be modified to each individual’s taste buds.

Lately, Ive been playing around with a few different plant-based taco options and I have finally landed on the best one! The “meat” is made with walnuts and mushrooms and I have to say I was surprised at how delicious it turned out to be.

Savory Vegan Taco Meat: 


  • 2 cups walnuts
  • 2 cups finely diced mushrooms (any kind will do – I used white caps)
  • ¼ cup finely diced white onion
  • 1 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 1 tbsp coconut oil or olive oil (for sautéing)
  • 1 tsp cumin
  • 1 tbsp garlic powder
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp red pepper flakes


1.       In a blender or food processor, pulse the walnuts until they are finely chopped

2.       Heat pan on medium and sautee onions in coconut oil until translucent

3.       Add in mushrooms and all the spices

4.       Add in tomato paste and apple cider vinegar

5.       Sautee everything together for 10 minutes

6.       Add in ground walnuts

7.       Continue sauteeing until walnuts are soft and mushrooms are golden brown

8.       Remove from heat and transfer to a dish

9.       Use in tacos in place of ground meat

10.   I like to layer crisp lettuce, then the vegan taco meat, then guac and top it off with some salsa
