Healthy Chocolate Donuts with Lemon-Cashew Icing

Reading the title of this blog you may be thinking: whaaaaa? Healthy Donuts?! 

Well, let me tell ya – with this recipe, you can have your cake (donuts) and eat it too! 

Any client that works with me knows that I am not a fan of restrictive diets. With that said, I do enjoy getting people exicted about healthy alternatives to their favorite treats! Donuts are no exception! I played with this recipe quite a lot and had many taste testers along the way to make sure these donuts were legitmately delicious (not just to my tastebuds). 

I have made these ones with cacao powder to give them a chocolately taste but you can omit the cacao if you like more of a vanilla donut. Same with the icing, I use cashews as my base and will play around with different flavours. Here I am using lemon but you could swap that out with raspberries, chocolate or keep them plain!

Ingredients for donuts: 

  • 2 tsp chia seeds

  • 2 bananas

  • 1 cup banana flour

  • 1.25 cups rice flour

  • dash of baking soda

  • 1 tsp baking powder

  • dash of sea salt

  • 3/4 cup coconut sugar

  • 3 tbsp cacao powder (optional)

  • 3 tbsp MCT oil (or coconut oil)

  • 1 can coconut milk

Directions for donuts: 

  • make chia egg by combining chia seeds and 2 tbsp water, let sit in a small bowl for 15 mins (until it becomes gelatinous)

  • mash bananas in a mixing bowl

  • slowly add coconut milk and MCT oil and stir well

  • add in all the dry ingredients, stirring to ensure minimal clumps are formed

  • give it an extra stir to bring all the ingredients together

  • pour into a well greased donut pan

  • bake at 400 degrees for 12 minutes

  • transfer to a cooling rack or plate before icing

Ingredients for icing: 

  • 1 cup cashews

  • 1/2 cup maple syrup

  • 1 tsp sea salt

  • juice of 1 lemon

  • 2 tsp lemon rind

Directions for icing: 

  • soak cashews for minimum 30 minutes

  • drain cashews and pour into a blender

  • add in maple syrup, lemon juice and salt

  • blend well until very smooth consistency

  • pour icing into a shallow bowl and stir in lemon rind

  • dip donuts in halfway, giving a twist before returning them back to the cooling rack, icing side up

  • let sit for 10 minutes

  • enjoy!!
